So I have decided to do a recipe of the week. As a mom I am always looking for easy and yummy recipes for the family and I am sure other moms out there feel the same way! So that's my inspiration for this blog.
This week is...Buffalo Chicken Chili with Bleu Cheese Toasted Chips
Ingredients
1 tablespoon extra-virgin olive oil (EVOO)
2 tablespoons butter
2 pounds all-white meat ground chicken breast or just use whole chicken breast and cut into bite size pieces
1 large carrot, peeled and finely chopped
1 large onion, chopped
3 ribs celery, finely chopped
5 large cloves garlic, chopped
1 tablespoon smoked paprika
1 bay leaf
Salt and freshly ground black pepper
2 cups chicken stock
1/4 to 1/2 cup hot sauce, depending on how hot you like it
1 15-ounce can tomato sauce
1 15-ounce can crushed tomatoes
1 7-ounce bag yellow corn chips
1 7-ounce bag blue corn chips
3/4 pound blue cheese, crumbled, recommended type Maytag Blue
1/2 cup flat-leaf parsley leaves, chopped (a couple of handfuls)
Preparation
Preheat oven to 375°F or broiler to medium
Place a large pot over medium-high heat, add 1 turn of the pan of EVOO, about 1 tablespoon, and the butter. Once the butter has melted and the pot is hot, add the ground chicken. Brown it, using the back of a wooden spoon to break it up in to small pieces, about 5-6 minutes. Add the carrot, onion, celery, garlic, paprika, bay leaf and some salt and pepper. Cook, stirring frequently, for about 3-4 minutes. Add the chicken stock and scrape up any brown bits on the bottom of the pot. Add the hot sauce, tomato sauce and crushed tomatoes, and bring up to a bubble. Simmer for 8-10 minutes to let the flavors come together.
While the chili is simmering, spread the yellow and blue corn chips out on a cookie sheet. Top with the crumbled blue cheese and transfer to the oven to melt the cheese, about 4-5 minutes. If using the broiler, 2-3 minutes should do the trick. Remove from the oven and sprinkle with the chopped parsley.
Top each serving of buffalo chicken chili with a few blue cheese-topped corn chips.
***I used the chopped chicken breast and after it was done cooking in the pan I set a few pieces aside for the kids. This chili is WAY too hot for kids so saving some chicken prevents you from having to make another meal for the kids***

5 things that made me smile this week :)
1. The weather!
It was so nice and cool here all week...you would have never thought you were in Texas in September! We did have rain almost all week but honestly I will take the rain if it means its in the 60's!
2. Playdates!
The funny thing is when things don't work out as planned sometimes its for the better! We had certain things planned this week and literally none of them worked out but it was great. Tuesday we were suppose to go walking with Eve and it was raining so they came to our house to play and it was so much fun! Aiden and Jacob are so cute together and I love that he has a friend his age. Thursday we were suppose to feed the ducks at the park but it was raining so we ended up at the library and had a blast with all the moms that came over.
3. Crazy Cash!
You are probably wondering what in the world this is! LOL! When you shop at crazy8.com during certain promotional periods and spend $40 you get $20 in crazy cash that you can use at a later date and take $20 off your $40 purchase. Get it? So this week I used my crazy cash and bought Aiden 4 new long sleeve shirts, a pullover sweater and a hooded blue jean jacket. I LOVE online shopping :)
4. New recipes!
This week I tried out 4 new recipes for dinner and they all turned out amazing! I am thinking about turning Wednesday into recipe Wednesday where I post a new recipe every week so stay tuned for that...
5. My Friday evening!
Let me start this by saying we never eat out! Well at least very rarely, so when Cameron texted me yesterday around 4:00 pm and said that he wanted to take the boys and I out for dinner I was beyond thrilled! I was having the worst evening...had cleaned house all day and was exhausted and not looking forward to making dinner. I said give me and hour and I jumped in the shower got dressed and then got the boys dressed. By the time we were done he was pulling in the driveway. We went to one of our fav's before we had kids Fish City Grill. It was super yummy and the boys were awesome! Someone even came over to us and told us how well behaved they were (now I wouldn't have taken it that far! LOL!). The restaurant is in a cute shopping center so after dinner we walked around and watched the sunset! So much fun and a great way to start off the weekend!
I just wanted to add that one thing that did not make me smile this week is we are missing my goddaughter Lilly's 4th birthday party this weekend :( Lilly and my dad's birthday are a day apart and my mom decided to throw my dad a party this Saturday as well. What can you do? I hope Lilly has a wonderful party!
Anyway, Happy Fall Weekend everyone!

Keeping our Family Healthy
This year more so then any other year I am on a mission to keep my family healthy this winter season. With the swine flu and so many other awful illnesses floating around in the air it seems like it is getting harder and harder to keep everyone healthy. Before I decided to be a stay at home mom I worked for a nutritionist who created and sold a line of supplements. From working there I saw first hand how amazing these products were. I saw people that were so sick from cancer come in and meet with Dr. Marshall, start on a program he designed for them and months later come back and say they were cured! I am so serious! It was amazing!!!! While I worked there I took many of the supplements and seriously I never had felt better. After leaving I quit taking them mostly because it was hard to get my hands on them. But not anymore! They have a website that you can order the products from!

Unlike other vitamins or supplements out there these are pure! Our family is currently taking the colostrum powder and the greens mix. To celebrate the first day of autumn
yesterday I made the yummiest dinner...Rachel Ray's Awesome Autumn Stew :) It's a fav in our family especially this time of year so I wanted share the recipe with everyone! I hope it becomes one of your family favs!
Awesome Autumn Stew
Serves 6
Ingredients:
•1 package pork tenderloins (2 pieces), trim them up and remove the shiny silver skin and connective tissue or ask the butcher to do this for you
•Salt and freshly ground black pepper
•2 teaspoons sweet paprika
•1/4 cup flour
•1/4 cup extra virgin olive oil (EVOO)
•1 large onion, chopped into 1-inch dice
•4 carrots, peeled and sliced on an angle 1/2-inch thick
•5-6 ribs celery from the heart of the stalk, sliced 1/2-inch thick on an angle
•1 bay leaf, fresh or dried
•5-6 sprigs thyme
•4 McIntosh apples, quartered, core cut away, then cut into 1 1/2-inch pieces
•1 teaspoon allspice
•1/2 cup dried sweetened cranberries
•2 cups cloudy apple cider
•3 cups chicken stock
•1 loaf crusty whole grain bread
Preparation:
Cube the pork tenderloin into 1 1/2-inch pieces – big bites. Place the cubed tenderloins onto a sheet tray. Season the meat liberally with salt and freshly ground black pepper and toss with the paprika and flour until well coated.
Meanwhile, pre-heat a large, heavy-bottomed pot with the EVOO over medium-high to high heat. Once the oil ripples and begins to very lightly smoke, add the pork to the pot and sear it until it is well browned on all sides, 7-8 minutes (lots of brown bits should be left in the bottom of the pot). Remove the meat to a platter and reserve.
Add the onion, carrots, celery, bay leaf and thyme to the pot and season with salt and freshly ground black pepper. Cook the vegetables until they begin to become tender, 6-8 minutes. Add in the apples, allspice and cranberries and allow to sauté until the vegetables are quite tender but the apples still have some legs, 3-4 more minutes.
Pour in the cider and scrape up the brown bits that are stuck to the bottom of the pot. Add in the chicken stock and toss the pork back into the hot tub. Bring the mixture to a boil and allow it to simmer for 8-10 minutes or until slightly thickened, cranberries have plumped and apples are tender. Pull out the bay leaf and thyme sprigs from the pot and discard them.
Line the bottom of dinner bowls with a few chunks of bread. Ladle the stew on top of the bread and enjoy!
Along with this yummy dinner we were blessed with fall weather...in September...in Texas! That's crazy!!! We usually do not get our first cool front until October but yesterday it blew in. I am so excited to get up this morning and put on jeans and not sweat my butt off!

5 things that made me smile this week :)
1. My boys's are sharing a room!
I am so excited that my boys are finally sharing a room. While they were sick I slept in Aiden's room with both of them. When it was time for them to sleep in their room Asher was so sad and kept saying that he wanted to sleep in Aiden's room. So we tried it that night and they did great! So the next day I moved Asher's crib in Aiden's room and all his stuff. So far it's been a week and they are doing great!
2. My new scrapbook room!
So since Asher moved out of his room we were left with an empty room in the house. I have always wanted a scrapbook room so that's what I did...turn the old nursery into a scrapbook/arts and crafts/music room! The boys love it. Aiden calls it the arts and crap room which cracks me up everytime I hear it!
3. New shows on TV!
I love the fall...especially all the new shows that come on tv and our favorites that come back! This week The Biggest Loser and Survivor started! So good! And next week all our other favorites are coming back!
4. Fantasy Football!
I love fantasy!!!!! It makes football so much fun to watch! Cameron and I are in a league with friends and family and its so much fun. Plus I won last week which makes it even more fun :)
5. A glimpse into the future!
Since Aiden and Asher are now in the same room it seems like it the time is getting closer to when we will start expanding our family :) Cameron and I talked over the weekend about next May, when Asher turns 3, to move the boys upstairs in the bedroom up there and give them each twin beds. I think it's so cute to think that the upstairs will be their little hang out. They will have their bedroom, playroom and their own bathroom which is much bigger then the one downstairs. Then the old nursey will once again become a nursery again because our plan is to start trying for #3 next June. Then front bedroom will become the guest room. My mom is also talking about giving us their piano which we will also put in that room. I am really praying that things go as we plan because so far NOTHING has ever gone as we planned!

The beginning of a new decade...
That's what I told Cameron yesterday to make him feel better about turning 30! hehe! Easier to say considering I still have about half a year before I hit the big milestone :)
We had planned on a huge party for Cam on Saturday but since the boys were sick all week and still not feeling great we cancelled the party and just spent the weekend with the 4 of us. Cam was a little bummed but I had a few things planned for him that I knew would at least make it not so bad :)
Sunday he woke up to a few decorations me and the boys put up!

Then I made him this super yummy breakfast! Thanks Rachel Ray :)

After breakfast he opened his present from me and the boys. My husband is seriously one of the hardest people in the world to buy for so I was beyong thrilled by his expression when he opened his gift! He was so excited and really liked it :)

Then we put the boys down for a nap and enjoyed a super yummy lunch from Wing Stop...another surprise for him! The boys took a super long nap while we sat on the couch, watched football and most importantly watched our fantasy football :)
When the boys woke up we put the candles on the cake and sang to daddy!




I was a little lazy this year and had our local grocery store make the cake. I felt bad but seriously when you take care of sick kids all week when in the world are you suppose to make a cake? It was super yummy and Cam and the boys loved it (and me too)!


Overall it was a great day even if it wasn't what we had originally planned. When you have kids you just have to go with the flow!

5 things that made me smile this week :)
So after 5 days of being in the house with sick kids things are still not looking good for us. The boys both woke up today with runny noses and congested sounding coughs. Big bummer! So instead of thinking of 5 things that made me smile this week I am looking back to the last 7 years (how long Cameron and I have been married) and thinking of 5 things from the past...
1. My Wedding Day!
My parents were so wonderful to throw me the most perfect wedding ever! I still love thinking back to that day and how great it was. People still tell my it was the best wedding they had ever been to which of course makes me smile :)


2. Being young and carefree!
Cameron and I had such a great 3 years together before we had kids. We traveled, ate out all the time, spent money like it was going out of style and just enjoyed each other's company on lazy days. Those years I wouldn't trade for anything and I love looking back on them when life gets hectic :)

3. The day we met our little Aiden!
There are no words to describe the feeling of meeting your first born. It was so special and I can still remember EXACTLY how I felt. It's something that can never be duplicated :)


4. Meeting my sweet Asher!
Meeting your second baby is nothing like the first but so special in so many different aspects. As soon as I met Ash I wasn't nervous like I was with Aiden but felt very comfortable. He fit in my arms and our family perfectly :)



5. My boys together!
I love thinking back to the first day my boys met each other. Aiden was a little nervous about this little thing making his place in our house but after a week he warmed up to him and today they are best friends. I love when they hug, hold hands and help each other out. I love when they say "best friends forever" because I hope that's true :)





And on another note...this weekend is Cameron's 30th birthday! We were suppose to have a huge party for him but because of sick kids we cancelled. But I do have lots of exciting surprises in store for his so look for a weekend blog about it or if I can't get to it this weekend, Monday morning!

Will this week ever end?????
So today was one of the worst "mommy" days I have ever had! I really believe now that there is nothing worst then sick kids. Plus the medicine they gave the boys their doctor told me would make them "aggressive and irritated." Well that's just what any mom wants to hear. I just keep telling myself that the weekend is almost here and then their dad can help out :)
So whenever I am having a bad day with the boys I love to look back at pictures of them when they were little and perfect! LOL! I know that might sound silly but it really works...you should try it!
So here they are 2 years ago in all their sweetness!

Sick kids :(
So for the second holiday this summer we are sick :(
I was so sick on the 4th of July and now the boys were so sick on Labor Day. So far I have been really lucky and both boys have never been really sick together. Usually one gets sick and then when that one starts feeling better the other one gets sick. Not so lucky this time. Asher started running fever Sunday after naptime and about 2 hours later Aiden comes down with fever and well it was pretty much down hill from there. Both boys were up all night, then super sick yesterday. They spent the day fighting over me and crying. For some reason (not sure why) but daddy's are not wanted when kids are sick. I was so happy Cameron was home all day however he just didn't have the magic touch according to the boys. I was the only one that would make them happy. It wasn't until yesterday evening that Aiden wanted daddy and I have to say that was nice. Cameron held Aiden in his lap while Aiden napped and Asher was napping on the couch so I had the chance to get up and make a super yummy dinner...buffalo chicken enchiladas (I will post recipe later). As soon as I was done Asher woke up and it was back to sitting on the couch holding him. So today we are off to the doctor's office because unfortunately the boys are not better. I am hoping it's nothing too serious but with swine flu going around I would rather be safe then sorry.

Both boys were up all night, then super sick yesterday. They spent the day fighting over me and crying. For some reason (not sure why) but daddy's are not wanted when kids are sick. I was so happy Cameron was home all day however he just didn't have the magic touch according to the boys. I was the only one that would make them happy. It wasn't until yesterday evening that Aiden wanted daddy and I have to say that was nice. Cameron held Aiden in his lap while Aiden napped and Asher was napping on the couch so I had the chance to get up and make a super yummy dinner...buffalo chicken enchiladas (I will post recipe later). As soon as I was done Asher woke up and it was back to sitting on the couch holding him. So today we are off to the doctor's office because unfortunately the boys are not better. I am hoping it's nothing too serious but with swine flu going around I would rather be safe then sorry.

5 things that made me smile this week :)
1. Tea with raspberry lemonade!
This is a little drink I invented one day at our house when I was so sick of just drinking tea and water. Its super yummo!
2. My new favorite song!
Here it is! The boys and I dance all over the house whenever we hear it on the radio :) Watch, dance and fall in love with it like we did! (There is a dumb ad in the beginning but the video and song are after it)
3. Daytime talk shows!
I haven't watched daytime talk shows since Aiden was a newborn. Pretty much the only thing on at my house is cartoons during that day but I decided this week I was going to start watching some TV for myself during the day. If we are home when they are on I started watching The View, Rachael Ray and The Doctor's! I really like Rachael Ray! I have never watched it before but it is becoming one of my favorite shows!
4. Starting my church's mom's group!
I have been interested in starting a mom's group at my church for a long time! I felt like I got a calling for it not long after Asher was born but for some reason I never did it. That is until this summer. I emailed a lady at my church and she fell in love with the idea but said we should wait until the fall to start it. So this week I have been working with her and our first meetup is September 23! Yay!!! I cannot wait!
5. Jacob...Aiden's best friend!
At a play date with my new mom's group Aiden met a friend named Jacob. They are the same age and seriously adorable when they play together :) After playing together for awhile Aiden walked over to Eve (Jacob's mom) and I and asked if Jacob could be his best friend! We both melted a little because it was the cutest thing in the world! So now they are best friends!

Oh boys!
I guess I am entering the stage that every mom with 2 boys goes through...the wrestling, rough housing, I'm gonna kick your butt all day stage! LOL! All of a sudden, one day Aiden and Ash just started wrestling! I mean full out throw each other on the floor and roll around wrestling. And they love it! They don't cry or whine but just play with each other I guess like boys do. Cameron and I think it's hilarious and we actually love to watch them. I guess it's just seeing them playing with each other...kind of melts my heart. Then when they are done sometimes they hug each other and Aiden says "best friends forever." It's seriously so cute! The only thing I am not liking about the rough housing is when they force it upon me! LOL! I never imagined how beat up I would get as a mom. I will be just sitting on the couch relaxing and Asher comes over and jumps on me out of nowhere. I swear I see alot of bruises in my future!
